Goose Island Brewers Bern Priest-Blais and Marc Mammolti, and Chef Shawn Jackson, invite you to welcome Autumn with a harvest-inspired five course dinner. Our team collaborated on an exclusive menu featuring curated beer pairings with each dish. Throughout the evening, our Chef and Brewers will walk you through how each beer and dish complement and, in some cases, contrast each other in unique and surprising ways. Amuse Bouche:
Turkey dinner in a bite: stuffing crostini, braised turkey thigh, cranberry, potato
Paired with: Vienna Lager

1st Course:
Tourtiere: pork, beef, spices, pastry, green peas, gravy
Paired with: Burton-Style IPA

2nd Course:
Squash agnolotti: butternut squash, house made pasta, brown butter, creme fraiche, walnuts, apple, grana Padano
Paired with: Farmhouse Rye Saison

Entree:
Berretta braised beef cheek, parsnip puree, grilled brocollini, chilies, braising jus, roasted and pickled shallot petals
Paired with: Belgian Golden Strong Ale

Dessert:
Cheesecake: graham cracker, golden naked oats, blueberry, lemon curd, thyme
Paired with: Weissbier with blueberries and lemon zest
