• Removing the stringy and slimy fat but retaining the firm and dense fat necessary for superior tasting sausages
• Choosing the proper grind, spicing and mixing
• The addition of wine for flavour
• Preparing the casings and filling your sausage
• And, the best part, cooking eat what we make and complimentary glass of wine!

I use only farm raised pork - none of the commercial stuff.

No fillers are used.

Recipes have been in my family for 3 generations.

I have been making sausage for over 30 years.

I use wine as an added dimension of flavour.

Small classes (10-12 students)

Lots of interaction and hands on, you will be spicing, mixing and filling the sausage

Everyone will take home saugage to enjoy.

Everything you need will be provided - except the apron and the container to take home your sausage
